LAMB WITH CAULIFLOWER SALAD

Recipe

 

Serves 2-4

Prep time 6 minutes 

Cook time 8-10 minutes 

Rest time 6 minutes 

Special tools. Cast iron pan, non stick pan 

 

 

Ingredients

 

1 Rack of Lamb 

1/3 cauliflower sliced thin as possible 

4 radish sliced thin

2 stocks celery sliced thin

1 handful chives and mint. Chopped 

1 heaping tablespoon tahini 

1 lemon zest juice

1 healthy splash EV olive oil 

Kosher salt and pepper

Garnish 

2 tablespoons sesame seeds toasted

2 tablespoons sunflower seeds toasted 

1 teaspoon EV olive oil 

Kosher salt and pepper 

2 tablespoons feta crumbled 

 

 

Method

 

Preheat oven to 450 convention 

Season lamb with salt and pepper, sear back side in a hot cast iron pan.  Flip over onto fat cap once it is golden. Toss into oven for 8-10 minutes 

Remove and let rest for 6 minutes 

Toss all raw ingredients into a bowl and season with salt and pepper. Balance lemon with tahini and olive oil. 

Toss in garnish, taste, season and plate. 

Carve rack into lollipops and stack beside salad. 

Serve with a big confident smile.
